“Anybody can get it anytime. All they have to do is ask for it. Everybody loves it,” Chef Donald Ford explained. “It’s one of those things that will always be on the menu like our fried brie and our hummus.”
The Bistro Burger was on Coco’s menu when the restaurant opened at its original location in 2006.
Co-owned by husband and wife team Karen Wick-Gagnet and Jim Gagnet, Coco's moved to its current location from 515 Wayne Ave. just last year.
Three elements set the burger apart, Ford said.
1) Creamy Boursin cheese
2) Thick applewood smoked bacon
3) sweet caramelized onions
“Those things together are a pretty good combination,” Ford said.
The onions cook for three or four hours.
“A lot of love and time goes into cooking them,” Ford said. “The longer and slower you cook them, the more sugar comes out.”
The chef adds red wine vinegar and brown sugar to the onions as well.
“It give it that sweet and tart taste,” he said.
