Michael Freeman from the Mason-based wine distributor Vintner Select selected the wines to pair with Williams' dishes. Freeman has worked with Ollie's Place to expand the retail shop's wine selection, and the shop has launched weekly wine tastings on Saturday afternoon.
The special wine dinner will be held from 6:30 p.m. to 8:30 p.m. Feb. 28 at 518 Miamisburg-Centerville Road (Ohio 725). The cost is $60 plus tax and tip. Reservations are required. For more information, call (937) 723-8998.

Here’s the menu and the wine pairing for each of the five courses:
• 1st Course: Tempura Fried Micro Carrots smoked over hickory and pecan chips served with a bourbon maple glaze, paired with 2016 Riesling QbA from Von Winning (Pfalz, Germany)
• 2nd Course: Ollie’s Salad. Spring mix greens, shredded carrots and red cabbage with beer nuts and Citrus IPA dressing, paired with 2015 Scheurbe Kabinett from Geil (Rheinhessen, Germany)
• 3rd Course: Mushroom Beer Risotto. Creamy risotto with roasted mushrooms braised in craft beer, paired with 2006 Langhe Rosso from Malvira San Guglielmo (Piedmonte, Italy)

• 4th Course: Grilled Filet on a Cod cake served with broccoli and an IPA hollandaise sauce, paired with 2014 Pinot Noir from Torii Mor (Willamette Valley, Oregon)
• 5th Course: Turtle Cheesecake with chocolate chips and JW Lee’s caramel sauce, paired with Justino’s Fine Rich 3 Year Madeira (Madeira, Portugal)

By the way, if you were wondering about that 2006 Italian red, I was too, and I contacted Freeman about it, thinking that the vintage year might be a typo. Turns out it isn’t.
The wine has been resting comfortably at the Malvira winery in Roero, Piedmont. “It’s a special cellar release that we’ve had access to for the past 12 months or so,” Freeman said. It’s a blend of Barbera, Nebbiolo, and Bonarda.
