The 3,300-square-foot restaurant will seat about 100 and will employ about 30. It will occupy two suites, 135 and 140, that are located across a breezeway from an existing Potbelly Sandwiches, in the retail strip that also includes Fusian Sushi, El Rancho Grande, Smashburger and will be home to Zombie Dogz.
The space had been considered by Noodles & Co., which had applied for a liquor license for the space, and later withdrew its application and canceled its plans.
Bibibop was founded in Columbus in 2013. It operates eight restaurants in the Columbus area and one in Liberty Twp. in Butler County.
Its restaurants operate with a fast-casual, assembly-line service concept similar to Chipotle. Diners choose from purple or white rice for their bowl, or have their dish prepared as a salad or wrap, then select from two types of chicken, beef or tofu, and then top their dish from a variety of vegetables and garnishes, from daikon radish to kimchi.
Bob Zavakos of NAI Bergman represented Bibibop, and Aaron Savino represented the Miller-Valentine group in the lease agreement.
