Ghostlight Coffee to offer weekday breakfast options starting Jan. 18

Our friends at Ghostlight Coffee know how hard workday mornings are. They've already helped us get through morning meetings with their signature lattes and variety of roasts, and starting Jan. 18, they're bringing us breakfast.

That's right: Starting next Monday, Ghostlight will be serving hot breakfast sandwiches starting at 7:30 a.m., with a second batch coming up at 8:30 a.m.

According to their Facebook announcement, the first round of breakfast sandwiches will be:

  • Bacon, Egg and Cheddar on English Muffin
  • Keener Farm Sausage, Egg and Cheddar on English Muffin
  • Two Eggs and Cheddar on English Muffin.

Ghostlight owner Shane Anderson said he and his team had been looking forward to weekday breakfast for several months, and had just figured out staffing to make it work on a daily basis. They'll also offer a rotating selection of locally made condiments available for the sandwiches, including Hawthorn Homestead jellies and HouseMade sauces. Variations on the sandwiches and condiments will be introduced occasionally.

"Mandy Smith, our baker, will be working with Chef  (Lee Anne) House (of HouseMade/Bad Dog Nice Taco) to offer different condiments that would go well with the sandwiches, such as Toxic Brew Spiced Mustard and a BBQ Aioli that uses our espresso as an ingredient," Anderson said.

Ghostlight has had breakfast options, including sweet and savory scones, frittatas, and breakfast sandwiches, available sporadically over the past year, but a regular rotation is new and oh-so welcome. But according to Anderson, there are no plans to offer the breakfast sandwiches on weekends.

"While we have occasionally offered the sandwiches on the weekend, as a special treat, we don't have any plans currently to do this on a regular basis, simply because we don't have staff in the kitchen at those hours on Saturdays and Sundays," he said.

The South Park coffeehouse has partnered with local eateries and food trucks in the past to bring us weekend brunch options, and we've loved them all, from Harvest Mobile Cuisine's fresh food truck options, to Chef House frying up delicious omelettes right next to the barista bar. Anderson confirmed that the omelette bar will return to Ghostlight one weekend a month, with a schedule to be announced soon. Food Truck Brunches will recommence in the spring.

"We encourage local trucks that can offer a brunch menu to park at Ghostlight as a great Sunday brunch option," Anderson said.

But for the morning weekday woes, these savory breakfast sandwiches will definitely hit the spot. Looks like we'll be grabbing our Breakfast of Champions on the go with our morning joe.
