There are robust flavor combos for every sort of taste bud, and Wheat Penny Chef Liz Valenti (who perfected the crunchy outside-soft inside California style at San Francisco’s International School of Pizza) offers gluten-free crusts if requested. Rich, to be sure, but a personal-sized pie ($12.95, $19.95 for a large pie) is just the right size before going overboard.

Rapid Fired Pizza lives up to its name, as they open new shops almost as quickly as they make their pizzas! The restaurants utlize a quick-service concept, with a serving line in which customers pick out the toppings for their 11-inch thin-crust or 9-inch pan pizza. Customers can choose from eight sauces, eight cheeses, more than 30 toppings, and 19 dipping sauces to build their pizza, or try one of the 10 craft pizzas on the menu.

Just what is it about this pizza at this 84-year-old Dayton institution? It depends on who you ask.

“A lot of that comes down to the sauce,” said manager Jessica Pricci. “One of the things we put in our sauce is 100-percent pure Italian olive oil.”
