Columbus-based Bibibop to open its 2nd Dayton-area restaurant on Thursday

Healthy-themed, build-your-own-bowl eatery chose Cornerstone of Centerville for local expansion

Bibibop Asian Grill had planned to open its second Dayton location at The Cornerstone of Centerville development in late March, but the coronavirus pandemic deep-sixed that timeline.

But with the mandatory shutdown of restaurant dine-in service lifted as of May 21, the Columbus-based chain is moving ahead with its plans and will open its 39th location at 5225 Cornerstone North Blvd. on Thursday, June 18, a Bibibop spokesman said.

The new restaurant takes over the space that previously housed MOD Pizza, which shut down in September 2019.

Bibibop Asian Grill was founded in Columbus in 2013. Its distinctive name is derived from the popular Korean dish, “bibimbap,” which translates into “mixed rice.” Its restaurants offer a fast-casual, build-your-own service concept similar to Chipotle or Subway. Diners choose from purple or white rice for their bowl, or have their dish prepared as a salad or wrap, then select from chicken, beef or tofu, and then top their dish from a variety of vegetables and garnishes.

Bibibop opened its first Dayton-area restaurant at 1200 Brown St. near the University of Dayton campus in December 2016. Last fall, the chain opened a location on Mason Montgomery Road in Deerfield Twp. near Mason.

Although this is the second Bibibop in the Dayton area, the Cornerstone of Centerville development has attracted multiple restaurant chains making their debut in the Miami Valley.

Among the restaurant chains that chose Cornerstone of Centerville to make their Dayton-area debut include Cheddar’s Scratch Kitchen, Bagger Dave’s Burger Tavern, Panda Express, CoreLife Eatery, Which Wich Superior Sandwiches, and Cooper’s Hawk Winery & Restaurant.
