New vegan restaurant now open at the Dayton Mall

That’s Soul Vegan was born out of founder’s desire to create flavor-filled meatless dishes

The Dayton area’s newest vegan restaurant is located inside the Dayton Mall in Miami Twp.

"That's Soul Vegan" opened earlier this month in the mall's food court. The new restaurant is a partnership between Ashaki Daugherty, who previously operated the KulaKula restaurant on North Dixie Drive, and Jose Estremera, owner of the Agnes Express restaurant, also located in the Dayton Mall Food Court.

Daugherty, who recently converted Kula Kula to a catering business, said she herself make the transition to eating vegan, and was not satisfied with the vegan-friendly options in the Dayton area.

“I also knew I wanted to cook it in a way that would allow me to enjoy it,” Daugherty said. “People have the mistaken belief that vegan food is bland, that it has poor texture. My dishes are prepared as soul food. I wanted to create dishes that everyone wanted to taste, that vegans and non-vegans could enjoy.”

The Dayton Mall Food Court is a great place to introduce her dishes to non-vegans, and several have become repeat customers, Daugherty said.

Menu favorites so far include “Soul Stuffed Meatloaf,” made from plant-based “Impossible Beef.” The meatloaf is stuffed with “Mean Greens” that have a slightly spicy kick and “Lip Smackin Mac” macaroni and cheese. Another customer favorite is the “Soul Rolls,” in which marinated jackfruit, macaroni and cheese and greens are rolled in a spring-roll wrapper and lightly fried, then served with “Original Soul Sauce.”

Other dishes use other plant-based meat substitutes, including Sausage Peppers and Onions, which features “Beyond Sausage,” and “The Forbidden Chicken,” which consists of Seitan Chicken pan-sauteed in an apple-cider-and-rosemary sauce.
